Honey (English pronunciation: /ˈhʌni/) is a sweet food made by honey bees using nectar from flowers. The variety produced by honey bees (the genus Apis) is the one most commonly referred to and is the type of honey collected by beekeepers and consumed by humans. Honey produced by other bees and insects has distinctly different properties.

Honey bees form nectar into honey by a process of regurgitation and store it as a food source in wax honeycombs inside the beehive. Beekeeping practices encourage overproduction of honey so that the excess can be taken without endangering the bee colony.

Honey gets its sweetness from the monosaccharides fructose and glucose and has approximately the same relative sweetness as that of granulated sugar (74% of the sweetness of sucrose, a disaccharide). It has attractive chemical properties for baking, and a distinctive flavor which leads some people to prefer it over sugar and other sweeteners. Most micro-organisms do not grow in honey because of its low water activity of 0.6. However, honey sometimes contains dormant endospores of the bacterium Clostridium botulinum, which can be dangerous to infants as the endospores can transform into toxin-producing bacteria in the infant's immature intestinal tract, leading to illness and even death (see Health hazards below).

Honey has a long history of human consumption and is used in various foods and beverages as a sweetener and flavoring. It also has a role in religion and symbolism. Flavors of honey vary based on the nectar source, and various types and grades of honey are available. It is also used in various medicinal traditions to treat ailments. The study of pollens and spores in raw honey (melissopalynology) can determine floral sources of honey. Because bees carry an electrostatic charge, and can attract other particles, the same techniques of melissopalynology can be used in area environmental studies of radioactive particles, dust, or particulate pollution.

What is the conversion rate of honey powder to liquid honey when baking?
Q. I have a recipe that calls for 2T of honey, but I'd like to use honey powder. Is the conversion rate the same, or does it take more or less of one to equal the other?

What kind of honey should I use for acne?
Q. I've heard really good things about honey and cinnamon powder for acne. But, I'm a little worried. I have fairly dry skin, but I have a few greasy spots, as well. I know that honey is really moisturizing, and when I moisturize regularly, my skin does look much better. So is honey alright for my skin? Also, I'm guessing that honey with sugar in it is not good for the skin. Right? Or is it okay to use sugared honey?

A. We hear a lot of things and i am a bit cautious unless I can at least verify some of the information. I have posted elsewhere that I know someone who used a natural product and got great results-the product was features on national Tv - see it below.

What will absorb honey or make it easy to clean up?
Q. My water heater is in a cupboard outdoors and bees decided to build a hive in the cupboard. We have knocked down the hive and now there is honey everywhere. I would like to know if anybody has any tips on clean up?

A. The warmer, the thinner and easier it will be, I think you can get it up with plain hot water and dish detergent or spic and span, but it will take time and lots of towels. Break the job into two days if it's really bad. I just read this and saw my word astricked out. Isn't that funny?

Anyway One of my fav new healthy diet is the fajita wraps w / light . honey. -mustard. This is good for a snack or a meal. I also love the yogurt granola bars. They have only 3 grams of fat and very tasty! Anyone else want to share?
